Christmas Treats: Brie & Cranberry Pinwheels

I’m addicted to scouring the internet and cook books for idiot proof recipes. I let out a a squeal of delight when I came across puff pastry pinwheels. I adapted a recipe which is beyond easy – you could even make them with your eyes closed. What’s better, they look so pretty and ours came out tasting like mince pies!

Brie and cranberry pinwheel6Brie and cranberry pinwheel1To create 12 pinwheels, all you will need is 5 simple ingredients and just 30 mins to get your hands dirty.

1 sheet frozen puff pastry, thawed
2 tablespoons Dijon mustard
2 tablespoons honey
A sprinkle of dried apricots and walnuts (optional)
1/2 cup finely chopped Brie cheese
1/2 cup dried cranberries, finely chopped

Brieandcranberrypinwheel12Brieandcranberrypinwheel9If you prefer to use homemade pastry, then I applaud you! Simply unwrap the pastry and roll it out on a clean work surface. Combine 2 tablespoons of honey and mustard and spread it all over the pastry, making sure to cover the edges. Next, smooth the chopped brie pieces on top of the mixture and sprinkle on apricots, walnuts and 1/2 cup of cranberries. The final step is to roll up the pastry and cut into 12 even sections. (I’ve been told to tie dental floss around the pastry and pull it tight to cut the pieces evenly!). Finally, you will need to lay pieces flat on baking tray and cook at 200*C for 15/20 minutes until golden.

Brie and cranberry pinwheel14If you wish to freeze the pinwheels, wait for them to cool down and put them inside a resealable freezer bag, they will last a couple of weeks. I hope you have enjoy this simple recipe, my aim is to cook more on Christmas Eve using Nutella and brownie filling instead. Will you be trying them at all?
