If you’re looking for a luxury boutique hotel in the Cotswolds that has been designed for deep rest, exceptional food, and slow living, then HYLL Hotel might just be the retreat you’ve been waiting for.

Perched above the rolling hills of Charingworth in the North Cotswolds, HYLL is one of the region’s most exciting new openings in 2025. It has just 26 individually designed rooms, a hyper-seasonal restaurant and calming grounds – all 100% intentional as the hotel has been created to help guests do something we rarely allow ourselves to do anymore: slow down. And honestly? That intention is felt the moment you arrive.

Tucked away on Campden Road in Charingworth (GL55 6NS), HYLL sits comfortably above the rolling countryside, overlooking green space that instantly signals: you’ve arrived somewhere special ma’am! From the outside, the hotel blends into the standard (but iconic!) honey-coloured Cotswold landscape, but step inside and you’ll find a place that genuinely feels rooted in the contemporary. This really isn’t the kind of hotel built around rushing from one activity to another. Instead, HYLL has been thoughtfully designed by its four owners as a place where guests can reconnect with themselves and just stop for a while.

In a world completely obsessed with productivity, HYLL offers something refreshingly different, like a place to come and do… pretty much nothing but rest, read and relax. It was my birthday weekend, so it turned into the most wonderfully restorative, bone-deep retreat.

The Rooms at HYLL: Boutique luxury with Cotswold Character

One of the most distinctive aspects of HYLL Hotel is its collection of rooms, each designed to feel like a countryside escape. No two rooms are the same. Some showcase traditional Cotswold stone walls, while others feature carefully curated textures and design elements that reinforce the hotel’s earthy, grounding aesthetic. The rooms are divided into two main accommodation styles, either inside the Manor House, or at the Courtyard. Both offer the same design philosophy but with slightly different personalities.

We stayed inside the restored 14th-century Manor House, which still retains the charm and architectural character of the original building while offering modern comforts. There are high ceilings, period-inspired styling, large super-king beds and my absolute fave – en-suite bathrooms with gigantic tubs and rainfall showers. The Manor House rooms feel super grand yet cosy, and they have the perfect balance between heritage charm and modern luxury.

The bathroom alone deserves its own moment. The bath made it almost impossible for me to leave the room which, to be honest, felt entirely aligned with the hotel’s philosophy of slowing down.

Dinner at HYLL: One of the best hotel meals in the Cotswolds

If the rooms invite you to relax, the restaurant at HYLL gives you a reason to celebrate. Dinner here was genuinely one of the best hotel dining experiences we’ve had in the Cotswolds. The menu is rooted in hyper-local, seasonal ingredients, highlighting produce from nearby farms and artisan suppliers such as Drinkwater’s Farm for vegetables and Kingstone Dairy for cheese. It’s intentionally small but beautifully curated, featuring a handful of mains alongside thoughtful starters like burrata, arancini, smoked eel and fresh scallops.

We began with white anchovies and pickled shallots before opening a celebratory bottle of Malbec (birthday rules). Starters included wood-fired beetroot with ajo blanco, green chilli and smoked almonds – buttery soft with a subtle smokiness – and Devon scallops with hazelnut butter, peas and watercress cream that were perfectly cooked and melt-in-the-mouth.

For mains, we chose the 8oz Hereford ribeye served with skin-on chips, wild mushrooms, roasted marrowbone and bordelaise sauce, which was absolute heaven. Josh opted for the spatchcock poussin with dates, caramelised lemon and truffle parmesan potatoes, equally impressive and packed with flavour. The dining room itself feels warm and intimate, with cosy seating and a relaxed buzz building through the evening; by around 7:30pm the space was lively but never overwhelming. The service was exceptional throughout, with the team constantly attentive and welcoming – special mention to Sean, who made the whole experience even more memorable. Honestly, I’d return to HYLL just for dinner.

Breakfast at HYLL: The perfect slow morning

If dinner is the headline act at HYLL, breakfast is the blooming encore you absolutely shouldn’t skip. Mornings begin with a generous spread that guests can help themselves to, featuring freshly baked pastries, artisan sourdough, local charcuterie, cereals, granola and honey sourced straight from the hotel’s own hives. It’s the kind of relaxed setup that encourages you to take your time and pour another coffee, slice another piece of sourdough, and ease into your day. It really was just so absolute bliss.

For those craving something hot, the kitchen offers a selection of comforting breakfast dishes made fresh to order. Options range from a classic Full English and avocado with eggs to Turkish eggs with whipped yoghurt and nduja, fluffy buttermilk pancakes and creamy porridge. Everything feels thoughtfully prepared and perfectly suited to slow, indulgent countryside mornings. After breakfast, I headed straight back to the room for another bath – it was very much that kind of morning.
