Quick And Easy Chicken And Cheese Pies

When the weekend comes around, I like to put my music on in the kitchen and browse through recipe ideas online. If you didn’t already know, I have a whole board dedicated to food on Pinterest. I recently came across a similar idea of baking chicken pies, so I decided to attempt my own version. It takes around 45 minutes to prep and bake a whole batch. They’re so simple and definitely worth the wait…

Ingredients you will need

2 cups of shredded rotisserie chicken
2 cups of grated cheese
1/2 cup shortcrust baking mix
1/2 cup of milk
2 eggs
1 tsp of salt

I preheated the oven to 190 degrees, and in a large mixing bowl, shredded chicken which I  cooked earlier in the afternoon. I added grated cheese and a teaspoon of salt. In a separate bowl, I combined half a cup of baking mix (I used Aunt Bessie but you can also make your own), the eggs and milk.

I lightly coated the muffin dishes with cooking spray and added 1 tbsp of the mix into the bottom of each muffin cup. Next, I added 2 tbsp of the chicken mixture on top. Lastly, I added 1 more tbsp of mixture so the chicken was completely covered. I made sure to distribute evenly so each pie was consistent.

Lastly, I put the two trays into the centre of the oven and baked for 30 minutes until golden brown. They smelled amazing and I checked with a knife in the centre to make sure they were thoroughly cooked.

Once cooked, I popped them onto a wooden board to cool. It’s satisfying how easy these chicken and cheese pies were to make and I like the fact you can use muffin dishes to make a whole batch. You can always add different ingredients to create different flavoured pies. These are perfect size for taking in packed lunches and are very filling. What do you think of them?   1. Hi lovely. It is really simple, just pour the baking mixture over the ingredients and whack them into the oven. I'm surprised I haven't made these sooner!

  6. These look so delicious and I'm surprised how quick and easy they are to make. I did try to make pie once but I found it a long process to do the pastry. I like it that you can just pour it over with these. Will give them a try next time I'm in Birmingham, as I can see my BF would love those. Thanks so much for sharing xxxx

  7. It's definitely worth it. I bought a big piece of chicken and cooked it for 2 hours before I made these. There's so simple to make – I hope you enjoy making them too!

  8. Oh my gosh this looks so yummy I hate raw chicken and the prep so might have to buy pre cooked chicken to do this though xxx
